Maedaya was a year in the planning and another year in the building: no wonder the crew looks happy to be here, grilling food, pouring drinks, calling a cheery "Irasshaimase!" (welcome) when anybody walks in.

The restaurant is an izakaya (which more or less translates as "sit down for sake"), a bar with food, in this case snacks and grills. You sit at smallish tables lining the smart, functional dining room, or at the bar with a view of chef Koh Nakamoto at the grill, bandanna wrapped tightly around his skull.

Owner Toshi Maeda sees his restaurant as a forum from which to introduce Australians to the subtleties and pleasures of sake and other Japanese beverages. He pours 65 different sakes, plum wines, spirits and beers, many more than you'd find in one place in Japan, where brewery cartels dictate to the drinking dens.
