Restaurant Ö is discovering and trying some of the new aspects of Estonian modern kitchen. Foodmaking for us is an intriguing challenge, where the traditional, local products and the experiment of treating them in a new, different way play a big part. We take into account is the variability of Estonia’s seasons unlike to many other, Southern countries. Our summers are short, winters long and spring, as well as autumn quite uncertain. Knowing this, we prepare ourselves throughout the whole summer to face the long, icy winter, and this brings us to a new phase: to look for and discover unorthodox products that could be used and implemented to the modern Estonian cuisine.
